Carrot and ginger soup no fat

Ingredients
4 cup, chopped Carrots, raw 1.5 large Onions, raw 0.5 cup Chicken stock, home-prepared 2 tsp Ginger Root 1 dash Salt 1 dash Pepper, black 6 cup (8 fl oz) Water, tap
Directions
Simmer chopped onions in 1 cup of water, Add salt and pepper to suit your taste Add chopped carrots plus rest of water ( boiled from the kettle) Add chopped fresh ginger Simmer until carrots are tender Blend ( I use a hand blender) Add more water if too thick. Enjoy Serving Size: 6 servings
