Piccata cod

Ingredients
2 fillet Cod (fish) 2 tbsp Extra Virgin Olive Oil 2 tbsp Butter, unsalted 8 fl oz White Wine 2 tbsp, drained Capers, canned 3 fl oz Lemon Juice
Directions
Salt and pepper cod. Dredge in flour. Heat pan add olive oil, place cod in hot oil. Sautéed until outside is nice and brown, flip and cook the other side. 2-3 minutes per side. Place cod in warm oven. Pour out excess oil and deglaze pan with white wine. Reduce white wine I. Half, add capers, lemon juice, and butter. When butter has melted take out and serve with cod. Do not pour over cod, rather put some on plate and place cod crispy side up.
