Turkey Stuffed Bell Peppers

2 green bell peppers (could probably use other red or yellow, haven't tried)1 cup cooked brown rice10 oz ground turkey1/2 medium onion, chopped1 tsp cumin1 tsp italian seasoning2 tsp garlic powder1/2 tsp pepper1 medium or roma tomato, chopped.
cook onions and turkey together in a pan until onions are cooked and turkey is no longer pink. Halve the peppers and clean out seeds/ribs. Boil 2-3 minutes to soften slightly, but don't overcook. Mix turkey/onion mixture together with the rice, and add seasonings and tomato. Put pepper halves in a baking dish, and stuff with the turkey/rice. Top each half with about half a tablespoon of cheese. Bake at 325 for 20-25 minutes. Makes 4 half-peppers or 2 stuffed peppers.

very good. I used fresh garlic and added tomato sauce to the bottom of the baking dish. It made a nice sauce to put on the top of the pepper when it was done. By the way, there isn't any cheese listed in the ingredients and it was great without it! I guess I can take calories off, right? - 1/27/09
