1 cup, hulled Sunflower Seeds, without salt 1 cup Pumpkin seeds 0.25 cup, chopped Pecans 2.5 cup, shredded Coconut, raw 16 tbsp *Flax Seed Meal (ground flax) 0.65 cup Coconut Oil 2 tsp Vanilla Extract 3 tsp Splenda No Calorie Sweetener 1 large Egg, fresh, whole, raw 3 tsp Cinnamon, ground 1 tsp Salt
Preheat oven to 350 degrees. Mix together all seeds, nuts and shredded coconut. Separately mix together egg, oil, cinnamon, salt, sweetener and vanilla. In a large bowl pour the cinnamon crunch topping and mix everything together well coating all the seeds and nuts. Pour coated granola onto a large baking sheet and spread into an even layer. Place in preheated oven and bake at 8 minute intervals turning all the granola in between. Bake for a total of about 30 minutes or until toasty brown. Be careful not to over bake!
