Red thai curry with tofu

1.0 cup, chopped Onions, raw2.5 cup Tofu, firm0.5 cup Boiled Potato (1/2 cup) No Skin no salt1.0 serving 1 Med. Green Bell Pepper74.0 gram(s) bell pepper, red, sweet, raw2.5 cup Sauce - Thai Red Curry Sauce - Trader Joe's
Preheat oven to 350.
Wrap yofu in several sheets of paper towel and set a heavy pan on top to remove moisture.
Cut tofu into cubes and put in preheated oven. Cook tofu for 25 minutes. Set aside.
Cube and par boil potatoes.
Slice onion and peppers.
Sautee onion and peppers until tender crisp.
Add tofu, potatoes and thai red curry sauce to veggies.
Let simmer at low heat until everything is heated through. (About 10 minutes)
Eat alone or serve over.brown rice or quinoa.
