Broccoli Cheese Balls

2 cups frozen Broccoli - chopped2 clove Garlic finely minced2 large Eggs 1/2 cup ground Flaxseed 1/2 cup 100% Grated Parmesan & Romano Cheese 3/4 cup Kraft Finely Shredded Sharp Cheddar Cheese
Pre-heat oven to 390 degrees. Thaw broccoli and mince using a food processor. Combine remaining ingredients in a large bowl. Using a scoop or your hands, form into ping-pong size balls and place on a parchment covered baking sheet. Spray tops of balls with olive oil spray so they brown and crisp nicely. Bake for 25 minutes. Can store in fridge in covered container for 2-3 days and reheat in microwave for 30-40 seconds.
I serve with a lemon-yogurt sauce made from 1 cup plain greek yogurt, zest of one lemon, 2 T fresh lemon juice, one clove garlic minced and a pinch of salt. Sauce contents are not calculated in nutrition information.
