Ginger Coconut Jasmine Rice

Ingredients
1 14oz can unsweetened coconut milk2 c. water2 c. jasmine or basmati rice4-5 slices fresh ginger root
Directions
Peel Giner and slice. Add all ingredients to a sucepan and put on medium heat. Stir often to keep rice from sticking to bottom of pan. After it is boiling, reduce heat to the lowest it will go, cover with tight lid and cook for 20-30 minutes until all liquid is absorbed and rice is tender. Makes 6 servings. You can garnish with toasted coconut if desired, but that is not counted in the nutritional info.
