Cauliflower Chowder - Paleo

1 head, medium (5-6" dia) Cauliflower, raw 2 clove Garlic 1 medium (2-1/2" dia) Onions, raw 2 medium Carrots, raw 2 stalk, medium (7-1/2" - 8" lon Celery, raw 4 cup Chicken stock, home-prepared 1 cup Coconut Milk (Silk) 1.25 tsp Cumin seed 1 tsp ground tumeric (by INSPIREDBYCHJ) 4 medium slices, cooked (raw pro Bacon, pork, microwaved 2 tbsp Olive Oil
Chop garlic, onion, carrots, celery. Heat olive oil in a deep soup pot and add veggies. Saute til tender, about 5 minutes. Meanwhile, roughly chop cauliflower. To the veggies in the soup pot and continue sauteing until lightly cooked. About 5 minutes. Add in the chicken stock, coconut milk and spices. Stir well, bring to a boil. Reduce heat and let simmer for about 15 minutes, or til veggies are tender. Microwave bacon, crumble and serve as a garnish on top. Enjoy!
