Black bean brownies

1 can black beans3 eggs3 T vegetable oil2 tsp vanilla extract1 pinch salt2 tsp baking powder1/4 cup cocoa powder, unsweetened3/4 cup sugar or sugar substitute (caloric values are based on sugar)1 T coffee grounds1/2 cup chocolate chips1/4 walnuts
BLEND (mixers just won't get the beans ground up enough) all ingredients except chocolate chips and walnuts. Blend thoroughly.
Preheat oven to 350.
Add in chocolate chips and walnuts. Bake at 350 in 9x9 PAM-ed (or greased) pan for 40 minutes (it will remain gooey in the middle because this brownie is very fudgy...but it shouldn't be dripping.) If too gooey, cook longer.
It also significantly helps to put store these in the fridge, it helps firm them up.

Another recipe I have for black bean brownies calls for four eggs and some ricotta cheese. I think that might help. I used the original version except used coffee crystals because I wasn't sure if coffee grounds were the correct ingredient. I think my whole family would like these IF I shared! - 7/12/12

My husband took some to work & WOW!Black Beans? no clue!I tweaked a bit. I used one egg, 1/2 cup cocoa, no choc chips, 2 tbsp wheat flour, 1/2 tsp baking soda, 2 tbsp melted butter, 1/4 c sugar, 1/2 c stevia,fprotein powder,no coffee,no oil,no salt.added some water, hit frappe. + nuts. no fridge!A++ - 6/7/12

Left out the nuts but used sugar free dark chocolate waffers on top and used splenda as the sweetener. Calorie change for 5x5 cut makes these 47 calories... only 75 if you did 4X4... I love to serve BB brownies with some vanilla greek yogurt and strawberries for a great desert! It's our favorite! - 7/8/10

Used dark cocoa powder and added 1/4 c of walnuts to the batter. To the top I chopped 1/2 oz. of semi sweet choc and sprinkled over the top with the 1/4 cup of chopped walnuts. Cut 25 squares and served one with a spoonful of no sugar low fat ice cream with a drizzle of no sugar choc sauce. Yummy - 3/18/10

These were a big hit at the Christmas party. I cooked them in a dark glass 9 X 9 pan and they were cakey so I may have overcooked them a few minutes. I used Splenda,put the nuts on top before baking and used only 1/4 c of choc chips, sprinkling on top after baking so they melted, looking very nice - 12/13/09

Made this w/some subs to make it South Beach friendly. Used 2 whole eggs and 1 white, splenda instead of sugar, part skim ricotta instead of oil, & omitted the choc chips. I added a splash of Davinci's sugar free german choc cake syrup-it came out good! Like a very moist cake w/a subtle choc flavor. - 7/3/09
