1 1/4 cups Flour - whole wheat 1/4 cup, unpacked Brown Sugar 1/4 cup Granulated Sugar 1 3/4 tsp Baking Powder 1/4 tsp Salt, Sifto Table Salt (by FAREWELLBC) 1/2 tsp Cinnamon, ground 1/4 tsp Nutmeg, ground 1/8 cup Egg White (Naturegg Simply Egg Whites) Per 1/4 cup (about 2 whites) 1/2 cup 100% Pure Florida Orange Juice - Extra Pulp 1/2 cup Applesauce, unsweetened 1 large apple, diced 1 cup, chopped cranberries 2 tsp orange zest
In a large bowl, combine the flour, sugars, baking powder, salt, cinnamon, and nutmeg. Whisk the egg whites, orange juice, applesauce and orange zest; stir into dry ingredients just until blended. Fold in the cranberries and apple.
Pour into an 8x4-in. loaf pan lightly coated with cooking spray OR 4 mini silicone loaf pans. Bake at 350° for 50-55 minutes (25-30 minutes for the minis) or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Cool on wire racks.
