Apple Granola Muffins

Ingredients
1 3/4 C. Heart smart Bisquick1/4 C. Cake flour1/2 C light Granola - I like bare naked fit, vanilla1 medium apple diced. I leave 1/2 of the peel 1/4 C. brown sugar1 yoplait light yogurt, flavor of choice1/3 C. light vanilla soymilk1 large egg1/4 tsp cinnamonpinch of nutmeg
Directions
In a medium bowl, place bisquick, cake flour, diced apple, granola and diced apple. In a smaller bowl mix yogurt, egg soymilk and spices. Incorporate liquid ingredients into dry. Do not overmix. Lightly spray muffin pan. Recipe makes 12 average sized muffins. I sprinkle a few peices of granola and lightly dust with cinnamon and nutmeg. This recipe is very adaptable.
