Chop onion and bell peppers. Add curry to hot olive oil and brown, then add veggies (stir fry for 2-5 mins). Then remove veggies and cook shrimp 2-3 minutes each side. Next add veggies back into pan and potatoes (with enough water to cover potatoes) let simmer on medium heat until potatoes are cooked.
