Creamy Comfortable Chicken Corn Chowder (Gluten Free)

Ingredients
4 ounces Chicken Breast, Cooked2 cup Chicken stock2 cup diced Potato, raw 4 tbsp Butter, salted 4 tsp Salt 1 cup Sour Cream .75 cup Kraft Finely Shredded Sharp Cheddar Cheese .25 cup Arrowroot flour 1 cup Sweet Corn, Fresh
Directions
Set aside the arrowroot flour. FYI - you can sub tapioca flour here, too.

Chuck everything into a 2.5 qt crock pot. Put the sour cream and cheese in last. Crack it to max, and go find something to do with yourself for an hour.

After about an hour, sprinkle in the arrowroot and stir everything up. The go away for another hour.

At the end of that hour, check out your soup. If there is a puddle of yellow fat pooling at the top, spoon it off. You can chuck it, or if you're smart, save it to add to another comfort food recipe. Now you can reduce the temperature to medium or low for the next hour.

At the end of the third hour, turn off the crock pot, and give it a stir. Make yourself a cup and enjoy. Then, and only the, tell everyone else that it's done.
