Ingredients

4 tsp. Olive Oil, divided
10 oz. skinless, boneless chicken breast - cut in 1/2" strips
2 cups sliced mushrooms
1 cup sliced onions
2 tsp all-purpose flour
1 cup chicken broth
3 Tbsp non-fat sour cream (Fage 0% works too)
1 tsp red wine vinegar (or white wine vinger)
1 tsp Dijon mustard
1/4 black pepper
Directions
Makes 4 servings
In medium skillet heat 2 tsp. oil & add chicken. Cook over medium-high heat, stirring frequently, until golden brown. Remove chicken from skillet, set aside.
In same skillet heat remaining 2 tsp oil. Add mushrooms & onions; cook, stirring frequently, until all moisture has evaporated and onions are golden brown.
In a small bowl combine broth & flour, whisk and add to skillet. Bring to boil, stirring constantly; reduce heat & simmer 10 minutes.
Return chicken to the pan, simmer 5 more minutes. Remove from heat, add remaining ingredients, blend then serve over rice, noodles, or potatoes.

My hubby loved this. I thought it was weird to the taste. I didn't understand how much broth so I added about a regular can of broth. I'd make it again if I had some white wine. Thank you. - 3/10/10

Thanks, for pointing out Kitty1970 that I forgot the broth amount. I have added it. As a side note, while it doesn't wow me either, my finance also loves this recipe. I find it filling while not being quite as detrimental to my daily calories as regular stroganof so I cook it every once in a while.
