Oatmeal Pancakes (the REAL version!)

Ingredients
1 1/4 cup oatmeal1 1/4 cup skim milk1 cup whole wheat flour2 egg whites1 tbsp canola oil1 tsp baking powder
Directions
Mix oatmeal and milk. Let stand 5 minutes. Stir in eggs. Stir in remaining ingrediants. Cook on a medium hot griddle. Makes 4 servings of 2 pancakes.

    Great breakfast for days you want to feel full, texture more an oatcake than pancake. Expect to need either syrup or honey to sweeten it afterwards. Having no whole wheat flour, I used white . Added ¼ cup of Wheat Germ. Added ½ cup of pumpkin puree, cinnamon, cloves and ginger. - 6/29/08
