Renovated General Tsao's Chicken

Ingredients
1 tsp ground ginger1 tsp red pepper flakes4 tsp olive oil2 cloves garlic, minced2 medium scallions, chopped4 Tbsp soy sauce, low sodium3 Tbsp splenda (or sugar)3 Tbsp corn starch1 lbs boneless skinless chicken, cut ino bite size cubes1.5 C chicken broth, low sodium2 Tbsp vinegar2 C rice, kept hot - rice not included in calorie counts
Directions
In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.

Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.

Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.

Serve chicken and sauce over rice. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving --- RICE NOT INCLUDED IN CALORIE COUNTS

    This was wonderful, my husband and I both really enjoyed it. We used sesame oil and 1/2tsp of red pepper flakes but will probably use 1/4t next time. We also sprinkled some toasted sesame seeds on top. Yummy! - 3/3/09

    This was very good. My husband and 2 year old twin boys really liked the flavor. I served it with brown rice and broccoli. I know this will effect the nutrition count, but I am going to try it next time with some Sherry and low sodium chicken broth. Yummy! - 2/27/09

    This one is one of my favorite meals and so glad that there's a version to limit the excess. It taste real close to the real thing, I mean, close enough without he heaviness that comes with the restaurant versions. I added green vegetables such as chopped broccoli and spinach. - 10/2/18
