Brother Bob's Puta Nesca de Pollo

Ingredients
1 pound chicken tenders or breast cut into bite size pieces8 oz or about 4 cups sliced fresh mushrooms, baby portabellos are best1 medium to large yellow or red bell pepper1/2 medium white or yellow onion1.5 cup of sundried tomatoes rehydrated and sliced.2 tablespoon olive oilpinch of dried Italian herb mix salt & peppergrated parmesan cheese
Directions
Over medium heat, brown chicken in olive oil (don't cook through), remove & set aside. Saute vegetables a bit, then return chicken to pan. Add 2 cups of broth and herbs/S&P. Cover and simmer about 20 minutes. When the peppers are cooked to your liking, so it the rest of it. Reserve remaining broth for risotto & prepare that according to package directions.
