Cajun Cabbage Roll Casserole

Ingredients
4 cup, chopped Cabbage, fresh 16 oz 93% Lean Ground Beef 1 cup, chopped Onions, raw 2 large (2-1/4 per lb, approx 3- Sweet peppers (bell) 1 cup Tomatoes - sm cherry tomatoes 3 clove Garlic 0.25 cup Tomato Paste 411 gram(s) Fit & Active Petite Diced Tomatoes (1/2 cup 121 g) (by MARVINJE) 12 tsp McCormick Cajun Seasoning (by TTROUBLE) .25 cup, packed Brown Sugar 8 serving Brown Rice, Great Value Natural Whole Grain Rice - 1/4 cup dry 2 cup Beef Broth - Swanson Low Sodium 28 gram(s) Avocado Oil - Chosen Foods - 1 TBSP
Directions
(To reduce cooking time, cook rice in rice cooker first.) Chop/dice veggies and set aside. Saute onion and garlic for about 5 minutes and then add ground beef. Cook and set aside. Saute peppers until almost soft then add cherry tomatoes. Mix everything except 1 cup of broth together in large mixing bowl and spread evenly in a 9x13 casserole dish. Pour remaining broth over casserole evenly. Cover and cook for about 1 hour at 350. Stir and cook for about another 30 minutes (until bubbly). (Reduce cooking time to 30 minutes if rice is cooked).
