Fiber One Bran Coconut Chocolate Chip Cookies

Ingredients
1/2 cup white sugar (can use splenda)1/2 cup brown sugar1/2 cup unsweetened applesauce2 egg whites or equivalent to 1 egg of Ener-g egg replacer 1 tsp baking powder1 tsp vanilla extract1 cup Fiber One cereal1/8 cup all purpose flour1/8 cup wheat or oat bran1/2 cup whole wheat flour1/2 cup shredded coconut1/2 cup chocolate chips1/2 tsp cinnamon
Directions
Preheat oven to 350 degrees F.
Combine dry ingredients in bowl
Combine wet ingredients in separate bowl
Pour wet ingredients into dry and mix well
Drop by teaspoonful onto greased baking sheet
Bake for 13-15 minutes, until golden brown on bottom edges
Makes 26-30 cookies

    These are really, really good! The coconut and cinnamon add a nice touch (texture and flavor.) I made them exactly as the recipe states, using Splenda and Gharadelli dark chocolate chips. I was so happy with how they turned out! The best thing is that they are lo-cal and healthy. - 11/16/08
