3/4 c. olive oil3 c.chopped egplant, 1 in. cubes3 c. sliced zucchini1 med. onion, cut into strips3 clv. garlic1 can (14.5 oz) undrained, sliced tomatoes1 can (4 oz.) sliced black olives, drained1 1/2 tsp. dried oregano1/2 tsp. salt1/2 tsp. pepper
Clean, chop & prepare all fresh vegetables. Heat very large pot or wok with olive oil. Add eggplant, zucchini,onion,peppers & garlic.
Saute for 15-20 min. coating vegetables by stirring regurlarly. Once they start to look about half-cooked, add the tomatos (including liguid) olives,oregano, sal & pepper. Stir all together well, cover, turn burner to Low, & let simmer for 40 min. or longer.
*Great recipe for a Crock Pot! 11 grams of carb & 3 gram fiber for total of 8 grams o usable carbs.
