Broccoli Soup

Ingredients
Olive Oil, 1 tbsp Onions, raw, 1 medium (2-1/2" dia) Garlic, 1 clove Broccoli, fresh, 400 gramslow salt veg stock cube, 1 serving boiled water, 1 litre
Directions
1. Chop onion roughly and Garlic finely.
2. Saute on a low heat in pan for about 4 mins, push tin foil down over it to stop it browning.
3. Cut end off stalk and disgard. Cut the rest ot the stalk into strips or cubes. Add to pan with stock.
4. After 5 mins add florets of broccoli and simmer for 5 mins.
5. Blend and serve.
