A.R. Chicken Salad

Ingredients
2 1/2 cans (5 oz) canned chicken, drained 3/4 cup dill pickles chopped 3/4 cup celery chopped 1/2 cup chopped red onion 1/2 cup lightly toasted and chopped pecans 2 hard boiled eggs 3 T. Smart Balance Mayonaise 2 T. Grey Poupn Djon Mustard 3/4 cup fat free ricotta blended till smooth
Directions
Combine all dry ingredients then carefully fold in the mayo, mustard, and ricotta. Serve over crackers or wheat bread. Yield: 4 1/4 cups salad. Serving size is 1/2 cup.
