Vegan High Protein Chili

Ingredients
1.25 block extra firm tofu1 14.5 oz can black beans, drained and rinsed1 14.5 oz can pinto beans, drained and rinsed1 14.5 oz can navy beans , drained and rinsed2 green bell peppers, chopped2 tbsp Extra Virgin Olive Oil 2 tbsp chopped Shallots 1 14.5 oz can Muir Glen Fire Roasted Diced Tomatoes1 jar Muir Glen Organic Garden Vegetable Pasta Sauce 3 tsp coconut sugar, Madhava™ Organic (1 t) 1 tbsp Chili powder 1 tsp Cumin seed 0.1 tsp Cayenne Pepper (Ground) 0.25 tsp Garlic powder 0.5 tsp Onion powder 1 tsp Salt
Directions
Saute shallots in a deep saucepan or pot in olive oil until translucent. Crumble the tofu into the pot with the shallots and saute the combo until tofu is dry (or desired consistency). Add the remaining ingredients, stir to combine, and simmer over medium low heat, stirring occasionally, for 15 minutes.
