JDR Shrimp Creole

Ingredients
32.0 oz Shrimp, Carolina, 50-701.0 cup Seafood Cooking Stock, Swanson8.0 tbsp Smart Balance Oil0.5 cup Flour - Gold medal all purpose flour8.0 tbsp chopped Shallots10.0 tbsp Tomato Paste, Cento2.0 serving 1 Med. Green Bell Pepper2.0 clove Garlic2.0 stalk, large (11"-12" long) Celery, raw1.0 dash Salt1.0 dash Pepper, black
Directions
Peel & clean Shrimp. Chop all vegetables. In a heavy skillet, make roux by heating oil & flour, stirring constantly until well browned. Add onion, garlic and celery and brown slightly. Add tomato paste and bell pepper. Stir 15 minutes over moderate heat. Pour in seafood cooking stock and cook 15 minutes over moderate heat. Add salt, pepper. Can add a pinch of cayenne pepper if you wish. Cook 1 hour on low heat. Add shrimp, cook 10 minutes. Serve over steamed rice.
