Einkorn Banana Muffins

Ingredients
1 cup Einkorn Flour 1 large Egg, fresh, whole, raw 1.33 cup, mashed Banana, fresh 36 tsp coconut sugar, Madhava™ Organic (1 t) .33 cup Applesauce, unsweetened .5 tsp Baking Soda 2 tsp Baking Powder 1.25 tsp Salt 1 tsp Cinnamon, ground 1 cup dry Oatmeal (plain)
Directions
1. Preheat oven to 350. Prepare muffin pan with 12 muffin cup liners, lightly grease.
2. In a large bowl, combine egg, banana, sugar applesauce, and vanilla. In a separate bowl mix together flour, baking soda, baking powder, salt and cinnamon.
3. Gently stir flour mixture and oatmeal into banana mixture. Our batter into prepared muffin cups.
4. Bake in preheated oven for 15-20 minutes or until light brown and an inserted toothpick comes out clean. Remove muffins from pan and place on a wire rack to let cool before serving.
