Homemade Pizza with Tomatoes, Jalapenos, Anchovies, Spinach and Red Onion

Dough:1 pkg yeast1 tsp sugar1 1/4 cup water3 cups flourSauce: (makes enough for 2 pizzas--only used 1/2 this amount in calorie calculations)1 can tomato paste1 small can tomato sauce1/2 tsp basil1 tsp oregano1/2 cup waterToppings:3 cups chopped tomatoes1 tin flat anchovies, drained1 cup chopped jalapenos3 cups finely chopped fresh spinach2 cups shredded mozzarella1 cup sliced red onion
Pour 1 1/4 cup warm water in bowl, add 1 tsp sugar and stir. Add one pkg yeast and stir--let sit 5-10 minutes. Add 3 cups flour (gradually) and knead dough. Place in bowl (sprayed with oil), cover and let rise until doubled (45 minutes or so). Spray a cookie sheet with oil and roll dough onto sheet, gently pressing into pan until it reaches edges. Let dough sit 5 minutes. Bake crust 10 minutes at 400 degrees Farenheit, then let cool a few minutes. (Dough recipe can easily be doubled).
For sauce: Mix one can tomato paste, one can tomato sauce, 1/2 cup water, 1/2 tsp basil and 1 tsp oregano. Spread 1/2 over baked crust. (Sauce recipe makes enough for 2 pizzas).
Add toppings and bake an additional 15-20 minutes. Makes 8 servings.
