Ingredients
2 EGG WHITES1/3 CUP ITALIAN SEASONED BREADCRUMBS4 TBSP GRATED REDUCED-FAT PARMESAN CHEESE1/2 LB CHICKEN BREAST4 OZ. WHOLE-WHEAT OR SPINACH PASTA1 CUP LOWFAT PASTA/SPAGHETTI SAUCE
Directions
BEAT EGG WHITES UNTIL SLIGHTLY FROTHY. MIX BREADCRUMBS & 2 TBSP PARMESAN CHEESE IN PIE PLATE. DIP CHICKEN BREASTS IN EGG WHITES, THEN INTO BREADCRUMBS (COAT BOTH SIDES). BAKE CHICKEN AT 400*F FOR ABOUT 12 MIN. EACH SIDE, OR UNTIL CHICKEN IS NO LONGER PINK AND BREADING IS GOLDEN BROWN. PREPARE PASTA WHILE CHICKEN IS BAKING AND WARM PASTA SAUCE. PLACE WARM PASTA (2 OZ PER SERVING) WITH BAKED CHICKEN BREASTS (4 OZ PER SERVING). TOP WITH PASTA SAUCE (1/2 CUP PER SERVING) & REMAINING PARMESAN CHEESE (1 TBSP PER SERVING). ENJOY!

    Not to take away from the recipe -----but I do this with thin chicken filets and do them in a Pammed pan on top of the stove. When they are in the pan I then Pam the top side before they are turned over. They are done in less than 5 minutes. - 2/19/09

    next time I will definitely drop the bread crumbs down to 1/4 cup and I think I'll be able to get away with only using one egg white. I'm not a big fan of throwing things away. But it tasted great! - 2/11/09

    This was really good. I coated the chicken with olive oil instead of egg whites. To me it seems like the bread crumbs stick better this way. Other than that, I didn't change anything and it was GREAT! - 4/14/08

    Frozen chicken breasts that are brined have a lot of sodium but I would assume most of the sodium came from your choice of Pasta sauce. They are normally very high in sodium. - 11/10/11
