1/2 cup oatmeal1/2 cup low fat cottage cheese1/2 cup egg substitute1 tsp vanilla extract1 tsp cinnamon2 tsp sugar
Preheat griddle.
Mix all ingredients together in a blender until smooth.
Spray griddle with cooking spray.
Cook pancakes. Can also be done in a waffle iron.

Heard about cottage cheese pancakes a while ago, but this was my first attempt. Tasted just like a “real” pancake, it was very soft and tasty! I was out of Eggbeaters and only had 2 eggs left, so I used 2 egg whites and about a Tbsp of unsweetened almond milk and it was still awesome. - 3/17/12
