Vegetarian Lettuce Wraps

Ingredients

2 cups fresh mushrooms, sliced2 cups zucchini, sliced½ cup Green Peppers (bell peppers), sliced¼ cup Yellow Peppers (bell peppers), sliced¼ cup Peppers, sweet, red, raw, sliced1 Cup Onions, sliced1½ cups Bean sproutsNote: experiment with any fresh vegetables in season Garnish with: Thai or Asian Peanut Sauce, 1 tablespoon per wrap ½ cup Carrots, grated1 cup Pistachio Nuts, shelled {slivered almonds are also good} 24 Fresh Bibb Lettuce Leaves washed and dried
Heat olive oil in a skillet or wok and add mushrooms, zucchini, peppers and onions. Stir fry until just beginning to soften but still crunchy.
Remove from heat and stir in Bean Sprouts.
Place lettuce leaves on a plate,
Serve garnishes of grated carrots and pistachios in separate bowls
Place a line of stir-fired vegetables in center of lettuce leaf and top with carrots and pistachios and a drizzle of peanut sauce, then roll as you would a burrito or crêpe.
