Zucchini Lasagna

Ingredients
3 regular sized Zucchini16 oz Ground beef 1 c chopped Onions 2 can (6 oz) Tomato Paste 2 cup Tomato Sauce 1/4 c Red Wine2 T basil1 T oregano 1 egg15 oz Ricotta Cheese (low fat)1 package frozen spinach 2 T parsley8 oz Mozzarella Cheese (part skim)1/4 c Parmesan Cheese
Directions
Preheat oven to 325. Slice zucchini and set aside in colander to let some moisture drain (some use salt to speed this process). Brown ground beef, add onion, tomato paste, tomato sauce, wine, basil, oregano. Simmer for 20 min. Next, mix ricotta, egg, spinach and parsley in a bowl. In a 9x13 dish, assemble lasagna in layers: meat mix, zucchini, ricotta mix, 1/2 of mozzarella, then repeat. Sprinkle Parmesan over the top. Bake for 45 minutes. Let stand for 5-10 minutes before serving.
