Mexican Layer Dip

Ingredients
1 can fat-free refried beans 1 pkg low-sodium taco seasoning 1 package of Wholly Guacamole - Spicy1 8 oz container of fat-free sour cream 1 package fat free shredded cheese1 cup Pico de Gallo (storebought or homemade)
Directions
Mix beans and taco seasoning together (to taste).

Spread beans onto whatever platter you like, to about a 1/4" thickness.

Spread guacamole on top of beans.

Spread sour cream over guacamole.

Sprinkle Pico de Gallo over sour cream.

Sprinkle cheese on top.

(For a Halloween party, I made a "web" of sour cream on top of the cheese and made spiders out of black olives.)

Serves about 10 people. Easily doubled, just use a larger platter!

    Everyone loved this, and I'll make it again. I substituted medium taco sauce for the pico de gallo, home made guacamole (2 mashed avocados, some garlic, some lemon juice) for the Wholly Guacamole, ff natural yoghurt for the sour cream and beef stock for the taco mix. Was fantastic! - 10/30/08

    I made this and brought it into work and everyone loved it. This recipe is amazing!! I made pico de gallo from scratch, and used Weight Watchers Sour Cream.. I also added some spring onion on top.. and for next time I might get a BBQ Chicken from the deli, chop, season and add to it!! GREAT RECIPE!! - 10/7/10

    I love this! The difference in the way we make it is: no salsa, layer a bunch of chopped green onion, then a large fresh chopped tomato, a can of sliced black olives. Instead of refried beans we use refried bean dip. Dip would have more cal. But we use Low fat sour cream, l.f. cheese and l.f. chips. - 10/30/09
