Spinach & Artichoke Pasta Sauce

Ingredients
50 gram Cashew Nuts (raw, unsalted) 100 gram Cream Single Alternative Alpro Soya 160 gram(s) artichoke, jarred (by RADLAN9) 200 grams Spinach, fresh 3 clove Garlic 1 medium (2-1/2" dia) Onions, raw .5 tbsp Extra Virgin Olive Oil 1 TBS Provence seasoning blendsalt and pepper
Directions
Soak the cashews in the cream with 50 ml water. Blend in blender or food processor.

Sautee onion and garlic with oil, add seasoning. Wilt in the spinach and add the rinsed artichoke hearts. simmer while cooking whole wheat pasta according to directions.

Adjust seasoning and serve.
