Fried Quinoa

Ingredients
1 pkt SunBird Fried Rice Seasoning Mix 2 tsp Soy Sauce 3 cup Quinoa, cooked and cooled2 eggs, scrambled2 tbsp Extra Virgin Olive Oil 1 cup frozen Peas and carrots, cooked 3 Green Onions
Directions
1. Heat oil. Stir fry onion and quinoa.
2. Add seasoning and soy sauce; stir fry 1 minute.
3. Push quinoa to side. Add in egg and scramble; mix into quinoa.
4. Add in peas and carrots. Heat through.

Serving Size: Makes 5 servings, about 1 cup each
