Veggie Bolognese Sauce ( redo of Giada D)

Ingredients
1 medium (2-1/2" dia) Onions, raw 3 medium Carrots, raw 2 clove Garlic .50 tsp Dried Thyme (by ARCTIC.ORCA) .50 tsp Dried Oregano (by ARCTIC.ORCA) 1.5 serving Baby Bella Mushrooms (3 oz) .125 cup Tomato Paste .50 serving Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1 cup 8 tbsp Bel Gioioso Mascarpone Cheese 3 cup zucchini noodles .25 cup Parmesan Cheese, grated 2 tbsp Extra Virgin Olive Oil
Directions
heat oil add chopped onion and carrots saute for a few add garlic and mushrooms continue cooking til veggies soft, add tomato paste veggie broth and seasonings. Simmer for 10 minutes until liquid reduced. Shit fire off and add mascarpone cheese stir in.

Steam noodles in microwave for a couple minutes season with salt and pepper
