Sweet Corn and Vegetable Chowder

Ingredients
2 tbsp butter1 medium sweet onion diced or finely chopped3 Yukon Gold potatoes chopped2 medium carrots diced1/2 tsp dried Thyme 1 1/2 tsp sea salt 1/4 tsp black pepper2 cups vegetable broth or corn stock2 cup half and half or condensed milk 1 cup chopped green beans 1 medium sweet,red pepper, diced 1 medium zucchini or summer squash, diced2 tbsp corn starch 3 cups 2% Milk 2 cup frozen or fresh sweet corn,
Directions
1.Melt butter in heavy bottom pot 4 quarts or larger, over medium heat. Add onion and cook until it turns translucent, about 6 minutes.
2. Add potatoes, carrots, thyme, salt and pepper and stir. Add the vegetable broth and bring it to simmer and cook uncovered until potatoes are tender to the bite, about 12 minutes.
3. Add half and half, green beans, pepper and zucchini and bring to a simmer once again. Cook until vegetables are tender to the bite, about 5 minutes.
4. Whisk corn starch with 1/4 of the milk in a small bowl and add rest of the milk to the pot. When it comes to a gentle simmer, add corn starch mixture and corn kernels. simmer until chowder thickens and taste for seasoning before serving.

    Made for dinner tonight in the crock pot! (5 hrs on High) -- Since I always go with veggies on hand, I substituted 2 (sweet peppers, grn beans) for 2 others: kale & cauliflower (riced). I also added in pork sausage for a meat. Great flavor all around. Will definitely "do again"! - 4/12/21
