Oatmeal Applesauce pancakes

1 cup Bob's Red Mill organic quick cooking rolled oats 2 oz North Coast organic applesauce 2 tbsp So Delicious dairy free coconut milk 2 large Egg, fresh, whole, raw 1 tsp Cinnamon, ground 1 tsp Vanilla Extract
Mix oats with hot water and applesauce, and let stand a couple minutes until 'fluffy.' Here, use your own judgment on the consistency; if too runny, add more oats. I played with it here.
Mix milk and egg, and then add to oats mixture. Then stir in the cinnamon and vanilla extract.
Fry up on a hot griddle or pan, just as you would any pancakes.
Top with your choice of toppings, or just eat plain. They can also be frozen to enjoy during week as a quick 'grab-n-go' breakfast. I got 4 nice thick pancakes out of this.
