Keto Instapot Egg Bites (Starbuck copycat sous vide)

4 large Egg, fresh, whole, raw 4 oz Gruyere Cheese 4 oz Cheese - Happy Farms Colby & Monterey Jack Cheese (1 oz per serving) 0.5 cup Breakstone's 4% Cottage Cheese, large curd .25 cup, fluid (yields 2 cups whip Heavy Whipping Cream 4 serving Meat - Bacon-Low Sodium-Kirkland (2 slices per serv)
1. Put eggs and cheeses in a blender on high until smooth.
2. Add cottage cheese, HWC and salt, blend again until very smooth
3. Grease egg bite mold, put crumbled bacon in the bottom, pour the egg mixture into the mold (3/4 full.)
4. Place 1 cup water in bottom of instapot, place the egg mold on top of the trivet. Lock lid and set the valve to seal.
5. Steeam for 5 minutes, then allow to vent for 5-10 minutes. Remove the egg mold, allow eggs to sit for a few minutes before flipping over.
6. Repeat all steps with the rest of the egg mix
