Egg bites - red pepper, onion, and cheese

Ingredients
6 large Egg, fresh, whole, raw 0.5 cup (not packed) Cottage Cheese, 2% Milkfat 0.25 cup Half and Half Cream 1 tbsp Extra Virgin Olive Oil 0.75 cup Aldi's Happy Farms Shredded Mild Cheddar Cheese (1/4 C) 0.25 cup, chopped Onions, raw 1 serving 1 Med. Green Bell Pepper
Directions
Sauté chopped veggies in oil. Set aside. Mix eggs, cottage cheese, and half and half in blender. Divide veggies and shredded cheese in 12 greased muffin cups. Pour egg mixture over the top. Bake at 350 for about 20 minutes.
