Vegetarian Mexican style Quinoa and Black beans

Ingredients
4 cans black beans, drained and rinsed0.5 cup water1 tbsp Extra Virgin Olive Oil 2 medium onions, diced8 Garlic cloves, minced 4 Roma tomatoes, diced 1 tsp ground Cumin 1 tsp Dried Oregano 16 oz salsa4 cups cooked quinoa
Directions
Saute onions in olive oil until soft. Add garlic, saute until fragrant. Add tomatoes, Cumin, Oregano, stir and let heat for 1 minute. Add black beans and 0.5 cup water, bring to a boil, let simmer for 10 minutes. Can mash some of the beans at this point to thicken. Add cooked quinoa and salsa to black bean mixture and stir. Makes 13 1-cup servings.
