1 oz. goat cheese1 plum tomato, chopped1/2 cup chopped sweet onion (like vidalia or walla walla)3 eggs, scrambled
Saute onions and tomatoes in pan with a little cooking spray until onions are translucent. Pour eggs into pan. When eggs start to set, add goat cheese. When eggs are firm and cheese starts to melt, serve.
