Grilled Veggie Pizza

2 whole-wheat pizza crusts2 packs 8 oz. pizza sauce2 cups mozarella cheese1 med-sized sweet onion1 red pepper1 yellow pepper1 small eggplantolive oil
Heat the charcoal or gas grill. Cut up veggies into large pices and brush with olive oil. Place on grill for 10 minutes and then turn over for another 5 minutes. Remove from grill. Chop the veggies to desired size.
Heat oven to 450 degrees. Spread one packet of pizza sauce and one cup mozarella cheese on each of the prepared crusts. Divide the chopped veggies between the two crusts. Place directly on oven rack for a crispy crust and bake for 15 minutes. Slide the pizzas onto a pizza pan to cut into slices. Serves 8; two slices each.
