Mango Cashew Muffins

Ingredients
1 C whole wheat flour3/4 C millet flour1/4 C soy flour2 tsp baking powder1/4 tsp baking soda3/4 tsp salt3/4 tsp cinnamon1/4 tsp each of ginger and allspice1/4 spelt bran or bran buds ground1/8 C olive oil1/4 C apple butter1/2 C maple syrup1 1/2 TBLS molasses3/4 C unsweetened soy milk1/2 C cashews (no salt)1/2 C sliced mango
Directions
sift dry ingredients
mix well all wet ingredients
gradually add dry to wet mix with fork.
do not overmix
drop into 12 greased muffin cups
bake at 325 for 20 minutes watch closely
