Chicken - Chicken Cacciatore (Keto)

10 oz skinless chicken breasts (or thighs) 2 tbsp Extra Virgin Olive Oil 1/2 cup, chopped Onions2 clove Garlic 4 oz Mushrooms, fresh 1/2 diced Green Peppers 1/4 cup Red Wine Vinegar Or WINE 1 cup Chicken Broth 1 15 oz can Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
In a large pot, brown chicken pieces about 3 minutes each side. Remove chicken from pan; set aside.
Add diced onion and peppers, mushrooms and garlic.
Stir in wine vinegar, scraping up any brown bits from bottom of pan and add diced tomatoes (with liquid), chicken broth and bay leaf; bring to a low boil. Salt and pepper to taste.
Tuck browned chicken into sauce, bring to a simmer, reduce heat to low; cover and cook for a minimum of 45 minutes or up to 2 hours.
Optional garnish: chopped fresh parsley; grated parmesan.
Serving suggestions: serve warm with roasted vegetables or keto friendly Almond flour bread.
