Light Strawberry Yogurt Coffee Cake

1/2 cup milk (I used unsweetened almond milk, but skim will do)1 serving (1 4 oz cup) Fiber One strawberry yogurt1/4 cup Egg white substitutes3/4 cup all purpose flour (or oat flour)3/4 cup whole wheat flour1/4 cup Fructose Crystals (or 1/2 cup sugar or 1/2 cup splenda)2 tsp baking powder1/2 tsp saltTopping1/2 cup packed brown sugar1 Tbsp all purpose flour (or more if needed)1 tsp cinnamon (optional)1/8 serving Dannon Light & Fit Yogurt (in place of 1 Tbsp of butter)3/4 cup diced strawberries
1. Preheat the oven to 375 and grease an 8 inch or 9 inch square baking pan
2. In a bowl, whisk together the milk, applesauce, and egg substitute
3. In another bowl, stir together both flours, sugar, baking powder and salt
4. Add dry mixture to milk mixture and stir until just combined.
5. Pour into greased pan
6. Mix together all topping ingredients and sprinkle evenly over cake batter
7. Bake for 18-28 minutes, depending on size of pan. Check to see if knife or toothpick comes out clean.
8. Cool on wire racks and store in airtight container
