Spicy Turkey Bundles

1 lb ground turkey (or chicken)2 clove Garlic - minced1 tbsp Canola Oil 1/3 cup chopped peanuts 3 tbsp Liquid Aminos or soy sauce1/8 tsp crushed red pepper flakes 1 1/2 tbsp minced Ginger Root 1 cup chopped Water Chestnuts 3 Green Onion - chopped finely12 large Bib Lettuce leaves
Combine turkey, ginger, garlic and red pepper flake in a medium bowl. Heat oil in large skillet over medium-high heat. Add turkey mixture; cook and stir 2-3 minutes until turkey is cooked through (may need to drain some of the liquid off at this point, but don't drain it all). Add aminos (or soy sauce) and stir-fry for 30 second. Add water chestnuts, green onion and peanuts and heat through. Divide evenly among the lettuce leaves and roll up.
