Light Vanilla Cupcakes

1 cup and 2 tbsp wheat flour1tsp of baking soda1/4 tsp salt1/4 tsp plus 2 tbsp granulated splenda2 tbsp plus 1 tsp unsweetened applesauceEgg white substitute for one egg2 1/2 tsp vanilla extract1/2 cup unsweetened almond milk
1 preheat the oven to 350 spray cupcake tin with nonstick spray
2 to prepare cupcakes in a small bowl combine the flour, baking soda and salt
3 In a medium bowl with an electric mixer on high, cream the splenda and 2 tbsp of the applesauce; add the egg and 2 tsp of the vanilla beating until smooth. Gradually beat in the flour mixture alternately with the milk until the batter is smooth. Divide the batter between all twelve cupcake spots . Bake until a toothpick inserted in the center comes out clean, 15-17 min . Cool in the pan 5 min; remove from the pans and cool completely on a rack. Frost with your choice of frosting.
