Ingredients
3 cup Dark Red Kidney Beans 1/3 cup Milk Cashew (Silk) - 1 cup (240ml) 4 tbsp Butter, unsalted 3/4 cup, packed Brown Sugar 3 large Egg, fresh, whole, raw 1 tsp vanilla1 cup King Arthur 100% Unbleached White Whole Wheat Flour 0.5 cup Whole Wheat Flour 1 tsp baking soda1 tsp ground cinnamon1/2 tsp allspice1/4 tsp nutmeg3/4 cup Raisins
Directions
Oven: 375 Blend in food processor: beans and milk until smooth. Beat together butter, sugar, eggs, vanilla until smooth, add bean mixture. Combine dry ingredients together. Add dry ingredients to wet ingredients. Mix in raisins. Bake 20 minutes. Cool in muffin tin for a few minutes before removing to cool. Optionally: drizzle with vanilla glaze. Serving Size: Makes 24 cupcakes
