2 cup, large curd Creamed Cottage Cheese 8 large Egg, fresh, whole, raw 1.5 cup Spinach, fresh, chopped up a little .5 tsp Kosher Salt .5 tsp Pepper, black .5 tsp Garlic powder .5 tsp Onion powder 1 tsp Parsley, dried .5 tsp Dried Oregano .5 tbsp Basil
1. Add all ingredients to a bowl and mix together thoroughly.
2.Spoon into individual muffin tins that have been sprayed with a non-stick spray.
3. Bake in preheated 375 degree oven for 25 minutes.
4. They will appear puffed up at first but as they cool will flatten.
5. Note: You can personalize this recipe by adding items like shredded cheese, omitting or increasing spices, chopped up roasted vegetables such as zucchini, peppers, onions, etc.
