2 Links Beyond Sausage (Hot Italian)1 tbsp Olive Oil 4 Tbsp Goya Sofrito Tomato Cooking Base 1 large onion, cut into strips1 large green pepper, cut into strips1 cup dry whole wheat penne pasta
PREP: Slice onion and pepper. Cut up "Sausage" into bite-sized bits. start pasta, cook according to package directions.
HEAT large skillet to medium-high heat. add oil.
ADD sausage and cook, stirring frequently, for about 2 minutes or until a little brown.
ADD pepper and onion, stir to coat.
REDUCE HEAT to medium and cover
SAUTE until soft, about 6 minutes
DRAIN pasta, add to skillet, add sofrito base. Stir and remove from heat.
SERVES 4
