Low-fat Oatmeal Banana Bread

Ingredients
1 C Old Fashioned Oatmeal1/2 C sour milk3 over ripe bananas1 C sugar2 large eggs1 C white flour1 tsp baking soda1/2 tsp baking powder1/2 tsp salt1/2 tsp vanilla1/2 C chopped walnuts(1/2 C mini choc chips optional)
Directions
Soak oatmeal in sour milk for about an hour. Add bananas and mash them, add eggs and sugar and blend well. Add dry ingredients, blend well. Add vanilla and nuts. Stir. Bake at 350 for one hour. Makes 1 loaf.

    I ended up with more than 12 muffins, but found this really good. I may tweak it the next time I make it to find a way to add more fiber. - 9/17/08
